No winner-winner chicken dinner

We eat out embarrassingly too often and it's ridiculous the time and money wasted on mediocre chain restaurant food. So I'm trying to us get back on the homemade dinner practice.

Clearly, as a working family with two young kids, there are two important things at stake:
  1. It's got to be picky-eater proof
  2. It has to be quick as we get home at 6pm
Tonight I turned to a recipe on the back of the Lipton Savory Garlic and Herb Soup Mix box:
Parmesan Crusted Chicken
1 packet Savory Herb and Garlic Soup mix packet
1/3 cup mayonnaise
1/4 cup grated Parmesan cheese
2 Tbsp bread crumbs
6 boneless, skinless chicken breasts

Pre-heat oven to 400 degrees. Combine soup packet, mayo, cheese in a bowl.
Brush mixture on both sides of chicken, then coat with bread crumbs. Bake for 20 minutes or until the chicken is no longer pink.

It fit my criteria perfectly. Kids love chicken, the prep and cook time is around 30 minutes. So I prepped it up, got it in the baking dish and then noticed I forgot the soup packet. I figured, what harm could it be to just pour it over the top? Bad idea. It never reduced in intensity, nor did it mingle with the juicy chicken, so that is all one could taste. Fortunately, it was easy enough to scrape off and eat the chicken without some of the breading and it ended up tasting pretty good. I'm looking forward to preparing the recipe correctly sometime and see if it's the perfect mix of parmesan and savory herb and garlic bliss.

Oh, and we also had some noodles and peas to round out the meal. Not exciting, I know, but it got the job done.

Now I know I can go online to plenty of culinary sites and source top-rated recipes. But I thought it would be better to put it out to you and see what kind of recipes you have to share. Drop a line and let me know what you've got. I'm sure everyone would appreciate a new recipe or two.

When I was raising kids - theirt all time favorite was Cowboy Casserole (or Hotdish for you MN types)

1 lb Hamburger
1 Lg can baked beans
1 onion
mustard
Ketchup or BBQ sauce
brown sugar
chili powder

Brown hamburger and onion, add beans. Spice with remaining ingredients to taste. Heat through and turn out on plate along with your favorite greens. Can double and triple.

Simple, fast and fun.

I love the slow cooker! Get a 2 1/2 - 3 lb roast, 2 8oz cans tomato sauce, one onion sliced, 1 packet good seasons Italian dressing, and 1/4 tsp salt, and 1/4 tsp pepper. Cook for 8 hours on low. It's awesome!!! And ww friendly :-)

Chipotle Chicken Taco Salad

Ingredients
DRESSING:
1/3 cup chopped fresh cilantro
2/3 cup light sour cream
1 tablespoon minced chipotle chile, canned in adobo sauce
1 teaspoon ground cumin
1 teaspoon chili powder
4 teaspoons fresh lime juice
1/4 teaspoon salt

SALAD:
4 cups shredded romaine lettuce
2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts)
1 cup cherry tomatoes, halved
1/2 cup diced peeled avocado
1/3 cup thinly vertically sliced red onion
1 (15-ounce) can black beans, rinsed and drained
1 (8 3/4-ounce) can no-salt-added whole-kernel corn, rinsed and drained
Preparation
To prepare dressing, combine first 7 ingredients, stirring well.
To prepare salad, combine lettuce and remaining ingredients in a large bowl. Drizzle dressing over salad; toss gently to coat. Serve immediately.

Tip: Add a spoonful of adobo sauce for a spicier salad. Kidney or pinto beans also taste great in this dish.

You can search for recipes by putting in your ingredients, how much time you have to cook, etc.

My kids are okay with the slow cooker as long as I deconstruct it before it gets on the plate, separate the meat from the potatoes etc.

Penny pinchers? I was surprised that my picky eaters didn't spot the difference when we substituted chicken thighs for the more expensive chicken breasts.

Okay. That sounded like a commercial but all true.

From the Campbell's Soup people:

Prep: 5 minutes
Bake: 25 minutes
Serves: 4

Ingredients:

4 skinless, boneless chicken breasts
2 cups Prego® Traditional Italian Sauce
1/2 cup shredded mozzarella cheese
2 tbsp. grated Parmesan cheese
4 cups hot cooked spaghetti

Directions:

PLACE chicken in 2-qt. shallow baking dish. Top with pasta sauce. Sprinkle with mozzarella cheese and Parmesan cheese.

BAKE at 400°F. for 25 min. or until done. Serve with spaghetti.

too funny...sounds so much like cooking at my home (with the exact same requirements). i also suggest buying from schwans. my kids love the popcorn chicken, which we usually serve with their steamed brown rice and steamed green beans. not sure if you really consider that cooking???
looks like our recipe nite will come in handy!
